A minced mixture of low fat ingredients: prime veal chunks which have been butchered on our own premises. This veal is aged up to 12 months, not crate kept.

The ratio is 80% meat, comprising of 75% veal meat, 5% duck meat 10% bone, from duck neck 5% ox liver, 5% ox kidney or spleen.
